The Signature Cocktail

Served at the Caddie’s Bar, the porch, and the sixteenth tee.
You will need
  • 2 oz Missouri bourbon
  • ¾ oz honey–chipotle syrup
  • ¾ oz fresh lemon
  • 2 dashes aromatic bitters
  • Smoked rosemary, to finish
Method

Combine the bourbon, syrup, lemon, and bitters over ice and shake until it aches with cold. Strain over one large cube. Draw a sprig of smoked rosemary across the rim and lay it to rest on the glass.

The honey–chipotle syrup is built from King Louie’s Meat Apostles Huney Chipotle — the number-one spicy rub in the country.

Pedro’s Prairie Fire Margarita

You will need
  • 2 oz blanco tequila
  • 1 oz fresh lime
  • ¾ oz honey–chipotle syrup
  • ½ oz orange liqueur
  • Meat Apostles rub, for the rim
Method

Rim a rocks glass with lime and a dusting of Huney Chipotle. Shake the tequila, lime, syrup, and liqueur hard with ice, then strain over fresh cubes. Pedro adds one extra squeeze of lime, for luck, and will not be talked out of it.

Hot Apple Pie Ribs
The rub does the work; you take the credit.
You will need
  • 2 racks St. Louis–cut ribs
  • King Louie’s Hot Apple Pie rub, generously
  • 1 cup apple cider
  • A brown-butter glaze
Method

Coat the ribs the night before with Hot Apple Pie rub. Smoke low over hickory for three hours; wrap with the cider for two; glaze and firm for one. Rest, then cut between the bones and say little.

Hot Apple Pie is an American Royal runner-up — a fact the kitchen states plainly and often.
For People You Wish to Impress
Huney Chipotle Wings
Sweet, then patient, then hot.
You will need
  • 2 lb chicken wings
  • A heavy hand of Huney Chipotle rub
  • A little oil
  • Warm honey, to finish
Method

Toss the wings in oil and a serious measure of Huney Chipotle. Roast screaming hot, or smoke until the skin snaps. Off the heat, hit them with warm honey and serve at once, to applause.
