What “Chef's Seasonal” Really Means

On most menus, “seasonal” is decoration. On ours, it’s a daily decision. The chef’s seasonal recommendations at The Sheaf change with what actually arrives at the kitchen door — fresh fish from regional waters and venison from local ranches.

Cooking with what the day brings

Seasonal cooking means accepting that you don’t fully control the menu — the season does. When the trout is running or the venison is at its best, that’s what the chef builds the night around. It keeps the kitchen sharp, the ingredients honest, and the experience a little different every time you visit.

So when your server tells you what landed today, listen closely. The seasonal board is where our kitchen has the most fun, and where you’ll find the dishes worth coming back for.
